Shev bhaji (Sev curry)

Shev bhaji is a hot curry made with 'Sev' a chick pea flour savoury snack. This is a signature dish of north western region of Maharashtra.It gets ready in minutes and you can have it with bread, bun or roti.

Ingredients :
  • Thick Sev : 1 cup
  • Onion (finely chopped): 1/2 cup 
  • Tomato (finely chopped) : 1/4 cup
  • Garlic : 2 cloves
  • Bay leaf : 1
  • Red chilly powder : 2-3 tsp
  • Turmeric : 1/4 tsp
  • Coriander powder : 1 tsp
  • Oil : 11/2 tbsp
  • Salt to taste
  • Mustard seeds and cumin seeds for seasoning
  • Cilantro to garnish

Method :





  • Heat oil in a wok. Once hot, add mustard seeds and cumin seeds and let them splutter. 
  • Add bay leaf, a minute later add onions and cook till translucent. Add garlic paste and mix.
  • Now add tomatoes and cook till mushy. Add red chilly powder, turmeric and coriander powder and mix well.
  • Add water to make a thin gravy and bring to a boil. Add salt (sev is salty so add accordingly) 
  • After its boiled for 5-7 min, add sev to it, stir for a while and switch off the flame.
  • Garnish with cilantro and serve instantly.
