This cake is my Mommy's recipe, which actually is the 'Simple Vanilla Cake', the only variation being the addition of tutti frutti. Cashew nuts, walnuts or raisins can be added excluding tutti frutti, which then will be called a dry fruit cake! The ratio of the basic ingredients in this recipe is easy and so I feel even the most amateur cook can bake it.Moreover, baking cakes from the scratch make you feel good and satisfied with your culinary skills which store bought cake mixes dont!
The ratio goes like 1:1:1/2 i.e,
(maida:sugar:oil)
(maida:sugar:oil)
- All purpose flour (maida) : 1 cup
- Sugar : 1 cup
- Oil : 1/2 cup
- Eggs : 2 no
- Baking powder : 1 tsp approx
- Vanilla essense : few drops
- Tutti frutti : 2 tsp
Method :
- Take a mixing bowl and pour oil into it. Add sugar and mix evenly.
- Beat eggs till fluffy. Add 2-3 drops of vanilla essence into it. Pour into the oil and sugar mixture and mix.
- Sift the flour and baking powder with the help of a sieve. With the help of a hand blender or spatula mix it gently into the above mixture, just till it turns into a batter of pouring consistency. (No need of extra beating or blending)
- Grease the baking tray with cooking spray or oil. Pour the batter into it.
- Spread tutti frutti on it. Bake the cake in a preheated oven at 400°F for around 20-22 min. Serve after it cools down!
