Bharwa Bhindi (Stuffed Okra)

Bhindi, Okra or Lady Finger is a good source of vitamins and minerals.Due to its fibre content it reduces constipation, helps controlling cholesterol levels in our body and also keeps the intestinal tract healthy. It is also said to help control blood sugar. It should be regularly included in our meals. Now ENOUGH of this! Lets see a simple and quick yet tasty recipe for Bharva Bhindi.

Ingredients:
  • Bhindi : 500g (1lb)
  • Coriander powder : 11/2 tbsp
  • Amchur powder (dry mango powder) : 1 tsp
  • Red chilly powder : 1 tsp
  • Turmeric : 1/4 tsp
  • Hing (asafoetida) : 1/4 tsp
  • Oil : 1 tbsp
  • Salt to taste
  • Mustard seeds and cumin seeds for seasoning

Method :






  • Wash and dry bhindi. Grease knife with oil (to avoid sticking) and cut off the tops and give two vertical slits as shown in the image. Keep aside.
  • Take a bowl and mix in coriander powder, amchur powder, red chilly powder, turmeric and salt. Mix  really well.
  • Take each bhindi and suff it with the above masala. Once done, take oil in a pan, add mustard seeds and cumin seeds. Allow them to splutter. Add hing powder.
  • Add the stuffed bhindi and stir till it gets coated with oil. Cook without the lid till it gets a crisp texture and a brown tinge.
  • Serve hot with roti or chapati.
